Beetroot Buckwheat Pancakes


Serves 1

Pancake mix:

- 120g Buckwheat flour
- 1 Ripe banana
- 1 Beatroot
- 50ml Almond milk
- 100ml Water
- 1 tbsp Coconut oil 
- Maca powder
- Lucuma powder

Toppings:

- Bee Pollen
- Cocoa nibs
- Banana
- Blueberries
- Vanilla maple syrup

Chop up the banana and beetroot, then add all pancake mix ingredients into the blender and mash until homogeneous mixture, if the batter is to thick for your liking just add more water. In a pan heat up a bit of coconut oil making sure it lines the whole pan, fry the pancakes on a medium heat until golden brown on both sides. Little tip here is to try and keep the pancakes small because if your try to make these pancakes thick and large, they will just fall apart. 

I also thought I'd mention I love all the Nuturya products which are vegan and friendly.
